Love potatoes and sushi? Now you can have both in this fried potato sushi roll.

Ingredients

  • 1 cup instant mashed potatoes, prepared
  • 2 sheets nori seaweed
  • 2 bars surimi
  • 1 egg
  • 1 cup panko breadcrumbs
  • Salt to taste
  • Oil, as needed for pan frying

Dressing

  • 1 cup mayonnaise
  • 2 chipotle chilis in adobo
  • 2 teaspoons lime juice
  • Salt and pepper to taste

Preparation
Prep Time: 30min | Cook Time: 10min

1. Prepare mashed potatoes according to the instructions on the package; season with salt and pepper to taste and let cool.
2. Spread seaweed and distribute mashed potatoes on them; place surimi in the center; roll up and dip into slightly whisked egg, coat the rolls with breadcrumbs; fry at high temperature for 3 minutes or until golden brown, one at a time; cut the rolls into 8 pieces and serve.

Dressing
1. Blend all the ingredients until well mixed, decorate the sushi rolls with the dressing.
