Description

This dish takes comfort food to a whole new level! The easy to find ingredients, creamy sauce, and delightful crunch, make this casserole the perfect way to impress your family without breaking a sweat.

Ingredients

  • 500 grams U.S. Frozen Tater Drums
  • 1 kilo Lean Ground Beef
  • 1 medium Onion, chopped
  • 1 medium Bell Pepper, chopped into squares
  • 4 pieces Garlic Cloves, chopped
  • 1 small Jalapeno, chopped
  • ½ teaspoon Paprika Powder
  • 1 teaspoon Tomato Paste
  • 2 pieces Diced Canned Tomatoes or Tomato Sauce
  • 80 grams Liver Spread
  • 3 pieces Bay Leaf
  • 2 tablespoons Brown Sugar
  • ½ cup Water or Beef Stock
  • 500 ml Coconut Milk
  • 1 cup Cheddar, grated
  • Fish Sauce, to taste
  • Salt and Pepper

Preparation

  1. Air fry the frozen tater drums at 400°F (200°C) for 12 to 15 mins or until golden brown. Set aside.
  2. Cook the ground beef in a hot pan. Set aside.
  3. Saute onion, bell pepper, garlic, jalapeno, paprika, and tomato paste.
  4. Add canned tomatoes or tomato sauce, liver spread, bay leaf, sugar and half cup of water or beef stock. Simmer until reduced by 30%.
  5. Add coconut milk and cheese then simmer for another 7 minutes.
  6. Season with fish sauce, salt, and pepper.
  7. Arrange in a baking dish by putting some air fried tater drums at the bottom of the baking dish, topped with the tomato beef dish, then arrange more tater drums on top of the beef dish.
