Description

Capampangan breakfasts are made even more delicious with U.S. potatoes! The craveable waffle fries serve as luscious foundation of the savory pistu. Waking up to a potato-fied treat has never tasted this good!

Ingredients

  • 4 pieces of frozen waffle potatoes (or 75 grams)
  • ½ piece chorizo coins, sliced (or ½ cup)
  • ½ piece medium onion, finely chopped (or ¼ cup)
  • ¼ piece medium carrot, diced (or ¼ cup)
  • ½ piece medium red bell pepper, chopped (or ¼ cup)
  • ¼ kilo lean ground pork
  • ¼ cup green peas
  • 1 whole large egg
  • 1 tablespoon unsalted butter
  • salt and pepper to taste
  • 1 tablespoon parmesan cheese, grated
  • oil for deep frying

Preparation

  1. Deep fry frozen potato crisscut at 400 degrees F for 4 to 5 mins or until golden brown.
  2. Fry chorizo in a pan until cooked then set aside.
  3. Sautè onion, bell pepper, and carrots. Add pork and cook for 10 mins.
  4. Add green peas and cook for another 2 mins. Season with salt and pepper.
  5. Finish off with melted butter and beaten egg.
  6. Sprinkle a bit of parmesan before serving.

Notes

Hash browns and potato halves can also be used in place of waffle potatoes.
