No pumpkin carving required this year, instead do a baked potato-Jack-o-lantern style!
Ingredients
- 6 Small to Medium sized yellow potatoes
- 2 tbsp / 1/8 cup / 30ml olive oil or vegetable oil
- 1 tsp / 4g kosher salt
- 1 tsp / 4g black pepper to taste
Preparation
Prep Time: 5min | Cook Time: 45min
- Preheat the oven to 400 °F and cover the baking pan with foil.
- Using a paring knife carve a face into each potato, eyes, nose, and mouth.
- Toss potatoes with oil and sprinkle with salt and black pepper (to taste).
- Place them on the baking sheet face side up.
- Roast potatoes for 45 minutes or until tender.
- Serve with sauce or toppings of choice.
- Garnish with fresh rosemary.
