Ingredients

Chocolate Truffle Potato Cake

  • 1 3/4 cups U.S. standard potato flakes
  • 3/4 cup Butter
  • 1 1/2 cups Sugar
  • 3 pieces Eggs
  • 3/4 cup Cocoa Powder
  • 1 1/2 cups All-purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1 1/3 cups water, hot
  • 1 1/2 teaspoon Baking Powder
  • 1/3 cup U.S. standard potato flakes
  • 1 cup Butter
  • 3 cups Powdered Sugar
  • 100 grams Chocolate, melted
  • 100 grams Milk
  • 1 tablespoon Cocoa Powder

Preparation

Cake
Baking temperature: 350F, baking time 30-40 minutes
1. Cream butter and sugar until light.
2. Mix all dry ingredients together, sift and add the potato flakes.
3. Alternately add the dry ingredients with the hot water.
4. Divide the batter into 3 pans. Bake until cake tester come our clean.

Icing
1. Heat the milk and add the potato flakes. Set aside to cool.
2. Melt the chocolate, set aside to cool to room temperature.
3. Cream butter and powdered sugar until light.
4. Add the mashed potato and the chocolate. Beat until smooth.

Assembly
1. Ice the cooled cake with the chocolate buttercream.
2. To make two-toned buttercream, divide the buttercream into two and add 1 tablespoon cocoa into the other mixture.
3. Decorate as you please.
