Green Goddess

  • 1 (5.3oz) Yellow Potato, peeled, boiled
  • 1-½ tablespoons (22g) Shallot, finely diced
  • ½ cup (118mL) Extra Virgin Olive Oil
  • 1 tablespoon (17g) Lemon Juice
  • ½ teaspoon (3g) Salt
  • 3 teaspoon (18g) Dill, dried or fresh
  • 1 clove Garlic
  • ½ teaspoon (3g) Onion Powder
  • Pinch (1g) of White Pepper
  • ½ cup (4oz) Plant-Based Cream Cheese, Dairy-Containing Cream Cheese, or Buttermilk
  • 1 tablespoon (17g) Fresh Chives
  • 2 tablespoon (34g) Fresh Parsley
  • 1 teaspoon (6g) Tarragon
  • ½ medium-sized Avocado
  • ¼ cup (2oz) Water or As Needed

Preparation

  1. Skin the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
  2. In a blender, add the potatoes and all other ingredients. Blend until smooth.
  3. Serve with your favorite salad!
