Crispy tater drums topped with tender grilled pieces of chicken smothered in a spicy cayenne pepper sauce and topped with tossed breadcrumbs and B&B pickles.
Ingredients
Hash Brown Bites
1-½ pounds (0.68kg) Frozen Tater Drums
As Needed Nonstick Coconut Oil Spray
Nashville Hot Pepper Sauce
¼ cup (60ml) Unsalted Butter, melted
¼ cup (60ml) Melted Lard (Vegetable shortening can be subbed)
2 tablespoons (28g) Cayenne Pepper
2 tablespoons (28g) Light Brown Sugar
½ tablespoon (7g) Smoked Paprika
1 teaspoon (4g) Garlic Powder
1 teaspoon (4g) Salt
1 teaspoon (4g) Freshly Ground Black Pepper
4 each (4 ounce/113g) Prepared Grilled Chicken Breast (The deli at your local grocery store is a great place to locate these time savers or grill your own chicken breast at home)
¼ cup (29g) Panko Breadcrumbs
8 slices Bread and Butter Pickles
1 tablespoon (2g) Fresh Parsley, chopped

Arrange the frozen tater drums on a baking sheet and evenly spray them with a light misting of nonstick spray, any spray can be used here instead of coconut oil if desired.
Set the air fryer to 425 F (218 C), Arrange the potatoes in an even layer in the air fryer, you may have to do two batches depending on the size of your air fryer.
Cook the frozen potatoes in the air fryer for 18-20 minutes or until they are golden and crispy.
While they are cooking make the sauce by combining the butter, lard, cayenne, brown sugar, paprika, garlic powder, salt and pepper in a bowl until they are all well combined.
As soon as the potatoes are crispy, open the air fryer and arrange the prepared fully cooked chicken breast on top of the tater drums. Set the timer for 5 minutes and cook the chicken and the potatoes together. Remove the potatoes and chicken from the air fryer and place the potatoes evenly into four serving bowls. Arrange the chicken breast on top each one and spoons some of the sauce over the chicken.
Garnish the sauced chicken with a sprinkling of breadcrumbs, the parsley and two slices of B&B Pickles.
Serve right away and enjoy.
