Description

Creamy mashed potatoes, studded with scallions, cheddar cheese, crispy bacon, and sour cream sandwiched between two slices of griddled sour dough bread. Quite possibly the ultimate comfort food.

Ingredients

Loaded Potato Filling

  • 1-½ cups (400g) Prepared Mashed Potatoes
  • ¼ cup (60ml) Sour Cream
  • ⅓ cup (37g) Chopped Bacon, fully cooked
  • ¼ cup (26g) Green Onions, sliced
  • ⅓ cup (78g) Cheddar Cheese, shredded

Sandwich

  • 8 slices (28.5g each) Sourdough Bread, sliced
  • 4 ounces (113g) Unsalted Butter, softened
  • ¼ cup (60ml) Mayonnaise
  • 1 cup (234g) Cheddar Cheese, shredded

Garnish

  • 8 each (40g) Mini Sweet Gherkins

Preparation

  1. To make the loaded potato filling: in a medium sized bowl, combine the prepared mashed potatoes with the sour cream, bacon, green onions, and cheddar cheese. Hold until ready to grill the sandwiches.
  2. Slice the sourdough and set aside.
  3. In a small bowl mix the butter and the mayo until well combined.
  4. Spread one side of each slice of bread with the butter mayo mixture.
  5. Preheat a griddle, flat top, cast iron pan, or large saute pan oven medium-high heat. Place the bread buttered side down on the preheated surface of your choosing. Sprinkle every other slice of bread with ¼ cup shredded cheese. Spread ½ cup of the potato filling on the slices of bread that do not have the cheese. After about 1-2 minutes sandwich the pieces together so that there is a potato side and cheesy side. Adjust the heat to low and occasionally flip the sandwiches so they brown evenly. The idea is to brown them evenly over the low hear all while slowly bringing up the temperature of the potato filling. Once the sandwiches are hot on the inside and bread is golden. Remove the sandwiches, cut in half and stab each one with a toothpick and a mini gherkin. Serve immediately.
