Potato and Eggplant Tower

Ingredients

  • Frozen Potato Basket Weave Cuts
  • Eggplant, Thinly sliced
  • 3 Tablespoons Olive oil
  • 1 cup Goat Cheese, crumbled
  • ½ cup Cilantro Leaves
  • Frying oil

Preparation

  1. Heat oil to 355ºF.
  2. Roast eggplant slices in a frying pan over high heat with olive oil; season with salt and pepper.
  3. When eggplants are half cooked, fry potatoes in frying oil; drain over paper towels.
  4. Build a tower alternating eggplant and potatoes; garnish with goat cheese and cilantro leaves.
