Ingredients
- Frozen Potato Basket Weave Cuts
- Eggplant, Thinly sliced
- 3 Tablespoons Olive oil
- 1 cup Goat Cheese, crumbled
- ½ cup Cilantro Leaves
- Frying oil
Preparation
- Heat oil to 355ºF.
- Roast eggplant slices in a frying pan over high heat with olive oil; season with salt and pepper.
- When eggplants are half cooked, fry potatoes in frying oil; drain over paper towels.
- Build a tower alternating eggplant and potatoes; garnish with goat cheese and cilantro leaves.
