Hot and fluffy potato pancakes topped with cinnamon apples and a maple flavored yogurt sauce.

Ingredients

Mashed Potatoes

  • ¾ cup (180ml) Hot Water
  • 1 tablespoon (15g) Unsalted Butter
  • ¼ teaspoon (~1g) Sea Salt
  • ¼ cup (60ml) Cold Milk
  • ⅔ cup (35g) Potato Flakes (Instant Mashed Potatoes)

Potato Flapjacks

  • 1-¾ cup (224g) All Purpose Flour
  • 2 teaspoon (10g) Baking Powder
  • ½ teaspoon (2g) Baking Soda
  • 2 tablespoons (25g) Granulated Sugar
  • 1 teaspoon (5g) Sea Salt
  • 2 teaspoons (10ml) Vanilla Extract
  • 1-¾ cup (420ml) Buttermilk
  • ¾ cup (152g) Mashed Potatoes (Made from instant potatoes *see above)
  • 2 each Large Eggs
  • 1 tablespoon (15ml) Vegetable Oil

Cinnamon Apples

  • 1 each (21 ounce can) Apple Pie Filling
  • 2 teaspoons (2g) Ground Cinnamon
  • ¼ cup (60ml) Hot Water

Maple Yogurt

  • 1-⅔ cups (400ml) Greek Yogurt, non fat
  • ⅓ cup (80ml) Maple Syrup

Garnish

  • 8 each Mint Sprigs

Preparation

  1. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
  2. In a separate bowl, whisk together the vanilla, buttermilk, mashed potatoes, eggs, and vegetable oil.
  3. Add the wet ingredients to the dry ingredients and stir together until just combined a few lumps are okay and it’s much better than heavy pancakes.
  4. Heat a large non stick skillet or griddle to medium low heat. When the pan is hot, measure a ½ cup of batter and place it into a circle on the cook surface. Cook the pancakes until bubbles start to form and the pancake is golden underneath (about 3 minutes). Flip the pancake and cook for another 2-3 minutes. Repeat with the remaining batter and keep warm.
  5. To make the cinnamon apples simply combine the apple pie filling with the cinnamon and the hot water and stir to combine.
  6. To make the maple yogurt simply combine the yogurt with the maple syrup and keep chilled until ready to serve.
  7. To serve spoon some of the yogurt onto a serving plate and top add the pancakes, then spoon some of the apples on top and garnish with some fresh mint if desired.
