Description

It’s time to treat yourself after that killer workout! With protein, potassium, carbs, fiber, and a whole lot of flavor, these potato tacos are your delicious ticket to fuel and recovery.

Ingredients

  • 500 grams U.S. Frozen Skinny Fries or Straight Cut Fries
  • 4 pieces Whole Wheat Tortilla or Pita
  • 4 pieces Pork Loin Chops
  • 2 tablespoons Taco Powder
  • 1 medium Red Onion, diced
  • 1 medium Bell Pepper, diced
  • 1 teaspoon Paprika Powder
  • 2 medium Tomatoes, diced
  • ½ Cucumber, diced
  • Romaine Lettuce
  • Salt and Pepper
  • Cilantro for garnish
  • Lime Juice

Preparation

  1. Dry rub taco powder to the pork loin chops then cook at medium to high heat until brown and tender. Do not overcrowd the pan. Set aside to rest.
  2. Saute onion and bell pepper in a pan. Set aside.
  3. Air fry the frozen straight cut fries at 400°F (200°C) for 12 to 15 mins or until golden brown. Set aside.
  4. When the fries are golden brown, toss it in a little bit of salt, pepper, and paprika.
  5. Warm the tortillas in a pan, then arrange the tacos by putting in the lettuce first, followed by the fries, the sliced pork, topped with onions, bell pepper, tomatoes, and cucumber.
  6. Garnish with cilantro and drizzle with lime juice.
