This has everything you’d ever want in your menudo and more! This savory meat pie version is guaranteed to wow your loved ones.

Ingredients

  • 1kg Ground Pork
  • 1 Whole Red Onion, minced
  • 5 Cloves Garlic, minced
  • 1 cup Tomato Sauce
  • ½ cup Soy Sauce
  • 1 cup Water
  • 2 pcs Bay Leaves
  • 200g Pork Liver, diced
  • 1 cup Carrot, diced
  • 1 cup Fresh Potatoes, diced
  • 1 cup Hotdogs, diced
  • 1-½ tsp White Sugar
  • Salt
  • Black Pepper
  • 2 tbsp Vegetable Oil
  • 200g Frozen Tater Drums
  • 1 cup Mozzarella Cheese
  • 1 cup Cheddar Cheese

Preparation

  1. Preheat oven to 220C.
  2. Heat oil in a saucepan and sauté the onions and garlic.
  3. Toss the ground pork in and cook until it changes color.
  4. Pour the tomato sauce, water, and soy sauce in and toss the bay leaves in and cook until the tomato sauce is slightly reduced.
  5. Add the pork liver and cook for about 6 minutes.
  6. Add the white sugar in and adjust the flavor.
  7. Add the vegetables and hotdog in and cook for about 10 minutes.
  8. Place in a deep baking dish and top with frozen tater drums in a circular pattern.
  9. Add cheese and bake for about 7 minutes or until the cheese has melted.
  10. Serve warm.
