Description

This flavor mash-up is a must-try! Relish the comforting taste of potatoes and apples drizzled with exciting pops of sweet and spicy from the glaze.

Ingredients

  • 2.5kgs Frozen Potato Slices
  • 5 Whole Granny Smith Apples, peeled and cut into wedges
  • 1 cup Brown Sugar
  • ½ cup Maple Syrup
  • ¼ cup Dark Rum
  • 5 tbsp Butter, unsalted
  • ½ tsp Cinnamon
  • ½ cup Lemon Juice
  • 2 tbsp Gochujang
  • Salt
  • 1 cup Walnuts, chopped

Preparation

  1. Place the apples in a bowl with the lemon juice immediately after cutting.
  2. Pre-heat the oven to 200C.
  3. Grease a baking dish with butter and arrange the potato slices and apples.
  4. Combine the sugar, maple syrup, rum, cinnamon, butter, and gochujang. Mix well and cook until thickened slightly. Season to taste with salt.
  5. Pour the glaze over the potato and apple slices.
  6. Bake in the oven for 20 minutes or until the apples are tender.
  7. Top with chopped walnuts.
