Ranch

  • 1 medium Yellow Potato (5.3oz), peeled, boiled (Can use Russets, Reds, or rehydrated dehy, if preferred)
  • 1-½ tablespoons Shallot, finely diced (22g)
  • ½ cup Extra Virgin Olive Oil (118mL)
  • 1 tablespoon Lemon Juice (17g)
  • ½ teaspoon Salt (3g)
  • 3 teaspoon Dill, dried or fresh (18g)
  • 1 teaspoon Granulated Garlic (6g)
  • ½ teaspoon Onion Powder (3g)
  • ½ teaspoon Mustard Powder (3g)
  • pinch of White Pepper (2g)
  • ½ cup Plant-Based Cream Cheese, Dairy-Containing Cream Cheese, or Buttermilk (4oz)
  • 1 tablespoon Fresh Chives (17g)
  • 2 tablespoon Fresh Parsley (34g)
  • ½ cup water (4oz)

Preparation

  1. Skin the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
  2. Add the potatoes, shallots, EVOO, lemon juice, salt, garlic powder, onion powder, white pepper, mustard powder, and cream cheese in a blender. Blend until smooth.
  3. In a large bowl, pour in the now-blended ingredients and fold with the fresh herbs- dill, chives, and parsley.
  4. Serve with your favorite foods!
