Caesar Dressing

  • 1 (5.3 oz) medium Yellow Potato, peeled, boiled (Can use Russets, Reds, or rehydrated dehy, if preferred)
  • 1-½ tablespoon (22 g) Shallots
  • ½ cup (118 mL) Extra Virgin Olive Oil
  • 4 teaspoon (23g) Lemon Juice
  • ½ teaspoon (3g) Salt
  • 2 Anchovy Fillets
  • 2 Garlic Cloves, whole
  • 2 teaspoons (11g) Dijon Mustard
  • 3 tablespoons (51g) Nutritional Yeast
  • ¼ teaspoon (2g) Black Pepper
  • ½ cup + 2 tablespoons (5oz) Cold Water

Preparation

  1. Peel the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
  2. In a blender, add the potatoes and all other ingredients. Blend until smooth.
  3. Serve with a Caesar salad or your food of choice!
